Holiday 2011 Cooking Instructions
Appetizers
Crab Cakes (pre seared) - Bake pre-seared cakes at 350-400 degrees for 7-9 minutes on appropriate pan until hot. Serve with Thai Dipping sauce on top or on the side.
Grilled Garlic Rosemary Prawns (pre-seared) – Bake at 350 – 400 degrees for 6-8 minutes on appropriate pan until hot. Put on platter and drizzle with pan juices.
Jumbo Prawns with cocktail sauce – served chilled with sauce on the side
Mini Wellingtons-Bake at 400 Deg. For 12-15 min. on appropriate pan until past golden brown. Let sit 5 Min. before serving with Horseradish sauce on side.
Lamb Pinwheels (pre seared)-. Top with Dijon aioli and pistachio crumbs and Bake at 350-400 degrees for 3-5 minutes on appropriate pan until hot.
Smoked Salmon – served room temperature.
Entrees
Lasagna – Bake at 325 degrees for 30-40 minutes until top is browned and crispy.
Leg of turkey confit-Let sit at room temperature for 30-60 minutes before baking. Bake at 350-400 deg. For 30-40 minutes on appropriate pan until hot and crisp.
Maple Glazed Turkey Breast- Let sit at room temperature for 30-60 minutes before baking. Bake at 350-400 degrees for 30-40 minutes on appropriate pan until 160 degrees in the center. Carve thin and serve with warmed glaze & pan juices.
Asparagus with Lemon Caper Tarragon Aioli - Sauté vegetables in a little virgin olive oil or canola oil over medium high heat for 2-3 min. until hot. Alternatively you can bake at 350-400 degrees for 8-12 minutes drizzled with the same oils or just microwave until hot. Serve with chilled Aioli on the side.
Garlicky Green Beans - Sauté vegetables in butter over medium high heat for 2-3 min. until hot.
Baby Field Greens- Toss Greens with dressing to taste. Layer in Onions, pecans, mandarins, beets and feta.
Old Fashion Turkey Gravy – Warm on low in a stainless pot stirring as needed until hot. Alternatively you can microwave in appropriate dish until hot. You can add skimmed pan drippings from the Turkey if you would like.
